      Yes, the Low-Carb Chocolate Chip Collagen Cookies has no egg in it. Our suggestion is to allow the cookies to cool for 10 minutes to harden or they will fall apart. However, please feel free to recreate this recipe with your own twist by adding or removing ingredients according to your own preference, while keeping in mind of the possible changes in taste and texture.

      • Loved the cookies and yes they didn't need an egg, I used erythritol for the sweetener. This was my first time using this sugar alcohol in a recipe. As lovely as the cookies were there was a burning sensation in the back of our throats which I assume was the erythritol. Do you know how the lakanto tastes? What is it? And what is the sugar/lakanto ratio? Thank you.

          We are also glad to know that you are interested to know more about Lakanto. Based on our online search, Lakanto is a brand behind a natural sweetener derived from monkfruit (also called Luo Han Guo), a plant native to Thailand and China. The extract claims to be 150-200 times sweeter than table sugar, has no calories, and is low-glycemic as it has zero calories and carbs and will not raise blood sugar levels. However, there has been a reported aftertaste because the highly sweet taste can trigger the release of insulin and for some people, saccharin is too bitter in flavor.

          To add, a 1-to-1 sugar to lakanto substitution may be too sweet. We suggest that you experiment the ratio that will fit your preference (eg. 1/3 cup of Lakanto is to 1 cup of sugar is a good start).

  1. Looking forward to making the brownies but as I'm not used to using cups as a measurement do you mean half a cup off oil that is already softened or half a cup of hard oil that you then soften?

    I have dumping syndrome for sugar and also fat digestion becomes a problem .

    Your good sweetener is unknown here but other bad stuf you must watch it .

    SUCRALOSE is a Chlorine derivate sweetener !

    Now STEVIA is on the market in Europe ..
