  1. Do yellow tomatoes have either less or no lectins than red tomatoes? If so, how much would substituting yellow for red tomatoes effect the effectiveness of this recipe?

    • Gundry made a big deal about lectins to sell his Lectin Shield product but the truth is very few people are sensitive to lectins. Cooking breaks down the lectins (who eats raw beans?) so if you are worried about it just roast the tomatoes first or use canned tomatoes well drained. Anything that comes in a can is cooked.

      • Actually, Dr. Brian Clement of Hippocrates Health Clinic, does recommend eating raw beans. Of course they are soaked and sprouted first. Garbanzo beans and lentils are use most often but the other beans can be used this same way.

        Night shades are a problem more than we might think. Dr Gundy's work was mentioned in the recent summit, the Secrets of Autoimmune Disease as something that needs further investigation. Removing the skins and seeds of the nightshades does minimize their effect.
