Brussels Sprouts and Blueberry Salad
Ingredient Highlights
Blueberries (especially wild) are among the foods highest in antioxidant power. Eating blueberries has been associated with a number of health benefits, including protecting and preserving lung function.
Brussels sprouts have antioxidant, antimicrobial, anti-inflammatory, immune-boosting, anti-aging, neuroprotective, and anti-diabetic properties. They are also abundant in quercetin, glutathione, beta carotene, indoles, vitamin C, lutein, and the metabolic substance DIM, which is a natural aromatase inhibitor.
Cayenne pepper is a good source of beta carotene and antioxidants that support the immune system. The key compound in cayenne called capsaicin is also cardioprotective, anti-inflammatory, helps prevent kidney stones and speed up metabolism, and has beneficial effects on the GI system.
Ginger is a potent aromatic herb and a good natural source of vitamin C, magnesium, potassium, copper, and manganese. It has been used for thousands of years in Asia to treat stomach ache, diarrhea, and nausea.
Enzymes in fresh lemon juice accelerate the digestive process. Even though lemon juice is acidic, it actually has an alkalizing effect on the body.
Pure olive oil is high in nutrients including vitamins D, E, K, and A as well as omega-3 fatty acids. For the highest quality, look for organic extra virgin olive oil in dark glass bottles or tins that have an expiry date.

i’ve never heard of heating up collagen does it not destroy it’s nutrients??
Hi Nancy, thanks for your question.
Heat does not damage collagen supplements. Fortunately, collagen protein is heat stable making collagen one of the few protein powders that’s good for cooking and baking.
We hope that helps. Keep us posted if you decide to give this fabulous recipe a try. We'd love to hear how it turns out for you.
Thanks so much for being here with us. Hope you have yourself a lovely day!
I just made this salad and I love it! I wasn't sure about the blueberries in it but I actually love the sweetness contrasted with the cayenne and ginger. Great flavor combo! I didn't change a thing except to cook with some garlic olive oil.
Sounds delicious!! I’m going to make this!
About your collagen — B4 I started taking it my skin would rip, tear or turn a horrible black and blue from the slightest bump on a cabinet corner ,or scaping my arm on a tree limb while working in the garden.. Now my skin is strong ! I haven’t torn my skin in MONTHS!! ! And no horrible black and blue ! I’ve been putting the collagen in a morning shake and again in evening tea. I also like that it blends very well and does not clump up. I’m deffinately going to try your recipe.
