  2. I thought that refined coconut oil is not in the healthy catagory. I would prefer a healthy oil. Could not cold pressed extra virgin olive oil work in this recipe? Thanks for your sharing, and for your advice.

      There doesn’t appear to be an easy swap out for the coconut oil. There are quite different vegan butter recipes online that don’t call for coconut oil, but they involve a totally different set of ingredients.

  3. I always look for Unrefined - why does it have to be Refined ?? -- I think I will rather use the unrefined Coconut oil - without the extra effort to "pretence" !!

      The reason why you should use refined coconut oil in the vegan butter recipe is that if virgin (unrefined) coconut oil is used, the butter is going to have a coconut taste.

      Virgin coconut oil boasts a delicious, tropical coconut scent and flavor while refined coconut oil has a neutral scent and flavor.
